Chef's Knife - Evercut Furtif
The Furtif range offers a collection of modern kitchen knives with ergonomic designs. The 19 cm blade of this chef's knife is tapered, wide, and pointed, designed to perfectly cut large pieces. This French knife, made in Thiers, features a stylish ABS handle, and the Evercut® technology gives it a cutting lifespan up to 300 times longer than that of traditional steel blades.
Evercut Technology
Evercut® technology is an exclusive French innovation, the result of five years of research and development. This cutting-edge process is based on the fusion, by a latest-generation laser beam heated to over 4,000°C, of an ultra-hard material, titanium carbide, on a stainless steel blade. This reinforced edge is then carefully profiled and sharpened using diamond wheels, the only ones capable of treating the Evercut® blade. This unique know-how guarantees an almost unwearable cutting edge, offering exceptional cutting quality and finesse. Tested and approved by the independent CATRA laboratory, the Evercut® blade has proven its durability, cutting 300 to 400 times longer than a traditional steel blade.

Exclusive French technology
The result of 5 years of Research and Development, the EVERCUT® knife is based on the technology of the same name: fusion by a latest-generation laser beam (at an instantaneous temperature of over 4,000°C) of an ultra-hard material, titanium carbide, on the edge of a stainless steel blade.
This reinforced edge is then profiled and sharpened by diamond wheels, the only material capable of machining the EVERCUT® blade. This technical process, complemented by extreme machining precision, gives EVERCUT® a virtually unwearable cutting edge with exceptional cutting quality and finesse.
Evercut performance tested and approved
The excellence of the cutting quality combined with an exceptional lifespan makes the EVERCUT® knife the best blade in the world. Throughout the development of EVERCUT® technology, we have focused on monitoring and measuring our results according to the standard in force.
EVERCUT® performance has been measured by the independent UK laboratory CATRA (Cutlery & Allied Trades Research Association), which assessed blade life and cutting quality according to the international cutting standard BS EN ISO 8442-5:2004.
A blade like no other
The life of the blade is measured by multiplying the CATRA test cycles until the blade is completely dulled: this gives the CER (Cutting Edge Retention) index.
Evercut versus steel blades: the EVERCUT® knife cuts 300 to 400 times longer than steel blades under the same conditions of use.
